Course Overview
The City & Guilds Level 3 Diploma in Advanced Bakery, Patisserie & Confectionary Skills is a Full-time Further Education course designed for students who are interested in working as a baker or confectioner within the catering industry. This is located in the Catering, Hospitality and Agriculture (CHA) department.
This one year course specialises in advanced baking, patisserie & confectionary skills for those wanting to progress to supervisory level in a professional bakery or kitchen.
The qualification is delivered through practical and theory sessions together with a real work experience in our Bakery Shop Blasus. You will develop a wide repertoire of skills from artisan breads to chocolate and sugar work.
VRQ 2 or equivalent in Patisserie and Confectionery. A Level 2 qualification in Professional Cookery or relevant experience. Interview also required.
The completion of this qualification will allow natural progression to our HND or Degree course in Hospitality Management and the Culinary Arts. Job opprtunites include bakery & manufacturing, patisserie chef working in hotels, restaurants, cruise ships or your own business.
You will develop advanced practical skills that cover a wide range of patisserie and confectionery products that you will sell through our Blasus Bakery Shop. You will also cover leadership skills, food safety, health and safety as well as look at the wider bakery, catering and hospitality sector.
You will build a portfolio of evidence that will be achieved through practical and theory assessments at our Bakery Academy.
There will be additional course-related costs for uniform etc.
